As the third-generation heir of a coffee estate, farm owner Jenifer Roja has been immersed in the craft since childhood, inspired by his father’s 20+ years of dedication to specialty coffee. In 2011, he began coffee tasting and joined his family in refining fermentation techniques to unlock the full potential of every cup. In 2019, he took a bold step by acquiring Varietales Farm, where he replanted with exotic coffee varieties and introduced innovative processing methods such as anaerobic washed and anaerobic natural. His Pink Bourbon undergoes a 12-hour anaerobic fermentation in whole cherries, followed by depulping and a second 48-hour fermentation to deepen flavor and refine acidity. Finally, it’s sun-dried on raised beds inside parabolic structures, allowing the flavors to stabilize and mature. This spirit of continuous learning and experimentation is what enables him to craft a truly unique and beautiful cup of Pink Bourbon—one that reflects his passion, precision, and commitment to excellence.
