2016年來自的斯洛伐克的農場主因渡假而留低
他發現,雖然越南是世界第二大咖啡出口國,但多數農民依然依靠低價的商業咖啡維生,對精品咖啡的概念與處理方法並不熟悉。於是,他決定放下原本的領域,投身精品咖啡領域,專注於提升 Arabica 的品質,並以處理法作為突破口。

借鑑Kenya的處理方式:
農場仔细收获并只选择最成熟的樱桃对于获得最佳质量至关重要。制浆后,豆子经过 36 小时的水发酵以分解粘液。接下来,将咖啡清洗并在清水中再浸泡 24 小时,从而获得非常干净的口感

第一年,他只出口了 600 公斤的咖啡豆,但他沒有退縮。憑著對品質的執著與對農民的承諾,他不斷學習出口知識、改進處理技術,並與附近 30 戶小農建立合作,最終集成了一整個貨櫃的精品咖啡,讓更多人品嚐到來自越南高地的純淨風味。

In 2016, a Slovakian farmer on vacation in Vietnam made a surprising discovery: although the country was the world’s second-largest coffee exporter, most local farmers struggled with low-price commercial beans and knew little about specialty coffee processing. Determined to make a change, he decided to stay. He introduced precise Kenyan methods—selective harvesting, 36-hour fermentation, and a 24-hour water immersion—to create an exceptionally clean cup. His first export was just 600 kg, but his commitment never wavered. Partnering with 30 smallholders, he gradually scaled up, eventually shipping full containers of high-quality Arabica, and unlocking the hidden potential of Vietnamese highland coffee.
