The new season's Ethiopian green beans have finally arrived. This time, I'm using the Alo label but sourcing from Bona, a mixed processing facility. The cherries come from three different kebeles: Bona Zuirh, Bombe, and Gute, all sun-dried with varieties 74110 and 112/158. The outcome is a clean sun-dried flavor with a lovely orange profile. Despite the high prices for green bean futures, as a mini-roaster, I must navigate the rising costs of materials without compromising on quality or resorting to price increases for my customers. It’s a balancing act to maintain the integrity of my coffee while managing expenses in this challenging market.
